I am a big fan of Gin. It used to just be a theatre drink for me which is why I’m so fond of it. Over the last few years it has grown in popularity massively so I find it a bit more of a go to now if I’m at a bar. With these Spring days heating up I’ve been inspired to make a Gin based cocktail that is sharper and more refreshing than a plain ‘ole G & T. As cocktails go, this is so simple. Shaken or stirred it’s just delicious 🍸
You will need:
- Pink Grapefruit
This recipe calls for Rosemary infused sugar syrup. Mash up a bunch of Rosemary leaves with sugar, do this in a blender if you have one. Pour over boiling water to dissolve the sugar and release the oils from the herb. Let this cool right down and then strain it so you just end up with a clear syrup.
You may have opted for pink grapefruit juice but if not juice a whole fruit for each cocktail. In a shaker add ice, 50ml gin. 20ml syrup and the juice.
Prepare a glass with crushed ice half way, shake the cocktail and strain over the ice. you can simply stir all these ingredients together if you don’t have a shaker. Top up the glass with a dash of tonic.
Garnish with a sprig of Rosemary with all but the tips removed and a pierce the rosemary through a thin slice of peel from the grapefruit.
Now put your feet up and enjoy!
