Raspberry Mojito

The garden has gone crazy, my hay fever has kicked in and I need a nice refreshing drink! I love a classic mojito but this recipe with the addition or raspberries smells and tastes like summer and is so easy to make. I’m definitely having mine with the rum but you can drop the rum and top up with extra soda for a delicious booze free version.

You will need:

  • 8 Raspberries
  • 8 Mint Leaves
  • 1 Tsp Brown Sugar
  • Juice of 1 Lime
  • 50ml Dark Rum
  • Soda Water

In a large glass or Boston shaker, add the raspberries, mint leaves, sugar, lime juice and rum with an ice cube or two. Have a look in your cutlery drawer and see if you have something you can use to crush all the ingredients together. Take your time over this step – this is where all the flavours are mixed and the more attention you pay at this stage the better your Mojito will be. When its all crushed together, you’ll end up with a juicy pulp like this….

How colourful is that!

It’s time to drink this baby.. Fill a tall glass with ice, add some raspberries, mint and lime to garnish. Using a strainer, pour the liquid into the glass, top up with soda to taste. Now go and sit with the sun on your face and enjoy.. Cheers x
